Around My Farmhouse Table: Tuscan Fazzoletti Pasta

Join Shawnie Kelley for a Tuscan travel-inspired cooking class in the beautiful demo kitchen at the Philip Heit Center for Healthy New Albany on Thursday, April 21 (6:30-8PM).

Drawing inspiration from the rolling hills of Tuscany, this unexpectedly beautiful herb pasta will wow your family and friends. Fazzoletti, loosely translated as “handkerchief,” is super thin pasta rolled with herbs then stretched until it resembles a patterned scarf. This artistic, creative, and delicious recipe takes advantage of the early bounty of herbs, allowing for endless combinations of aromatics, edible flowers, and flavor profiles throughout the season.

Class begins with a demonstration of how to make Shawnie’s fail proof dough, which you decorate with herbs and turn into beautiful patterned pasta! We also make a simple sauce and accompanying vegetable together. Prepare to be smitten with dessert – rustic almond pine nut cookies. We’ll explore variations on herb and food pairings while learning the surprisingly simple technique for making this stunning dish, which is almost too pretty to eat… almost! We share our delicious creations paired with a white wine. This class is great for vegetarians.

Shawnie Kelley is Partner & Travel Director for Wanderlust Tours, specializing in culinary and cultural travel through France and Italy. Most of her cooking classes are travel-inspired and integrate discussions about regional history and culture. She has written several books, including her current project, A Woman’s Guide to France.
