Explore the spicy exchanges between southern French and North African cuisine as instructor Shawnie Kelley Foy shares an original recipe for a Provençal Crêpe with Moroccan Lamb & Vegetable Tagine—an adaptation of her winning recipe in the National Food Bloggers Association competition.

“While living in France, I had my first taste of authentic Moroccan lamb tagine in Marseilles— and it blew my mind. I became fascinated with the exchange and influences between the two cultures. The complex, earthy blend of exotic spices, the rich sauce, the melt-in-your-mouth meat, and the vibrant, herbaceous vegetables all heaped on a plate hooked my palate for life. But “what’s a tagine?” you ask. A tagine is the North African answer to Sunday dinner. Think (clay) crock pot. Think hearty stews and family-style eating. Tagine is both the cooking vessel and the dish.”

Class begins with a Provençal vegetable couscous salad, then moves on to the star of the show—slow-cooked lamb and a chick pea flour crepe, and ends with a dessert of croquants d’amands (crunchy almond and orange blossom water biscuits). We’ll taste wines from the region and discuss history and food traditions while taking a digital tour of exotic spice markets and the countryside around Marseilles.
