This vibrant green pâte aux herbes (herb pasta) never turns out the same way twice, yet always delights. Fazzoletti, which in Italian loosely translates to “handkerchief pasta”, is a super-thin pasta rolled with herbs and stretched until it resembles a patterned scarf. This visually beautiful recipe, popular throughout the Mediterranean, allows for endless combinations of herbs, vegetables and edible flowers, creating flavor profiles you’ll return to throughout the seasons. Shawnie demonstrates how to make this scratch pasta dough and an easy sauce, along with an herbaceous chick pea side salad. For dessert, enjoy croquet d’amandes (crunchy almond biscuits). Explore the regional food traditions of the Mediterranean as you learn the surprisingly simple technique for making a stunning pasta dish that’s almost too pretty to eat.
